Wine Note
The “65” — Blanc de Blanc (Sparkling Chardonnay): We’re thrilled with our bubbly, there’s no better way to say it. We used the classic ‘Méthode Traditionelle,’ which allowed our winemaker to carefully look after each bottle as the wine was fermented in the bottle, turned by hand and crafted to have that bone dry, effervescent mouth-feel with consistent bubbles, notes of crisp citrus and melon, soft mouth-feel and lilting long finish. Oysters? Seafood? A celebration with no food? Yes, please.” — Mark Storer, NABU Resident Somm
